Job Description

As a Sous Chef at Fairmont The Norfolk Hotel, you will play an integral role in leading and managing the culinary team to deliver exceptional food experiences. You will ensure the highest standards in food preparation, presentation, and consistency, while fostering a positive and collaborative kitchen environment.

What You Will Be Doing:

• Lead, mentor, and train the culinary team to ensure the consistent preparation and presentation of food.

• Support the Cluster Executive Chef with administrative duties such as scheduling, payroll, and more.

• Supervise food preparation methods, portion sizes, garnishing, and food presentation.

• Oversee the ordering of food supplies and kitchen equipment, ensuring products meet quality standards.

• Maintain cost accounts and take responsibility for food preparation areas.

• Regularly evaluate the performance of kitchen staff and recommend salary increases as appropriate.

• Lead regular meetings with the kitchen staff and participate in all required meetings.

• Ensure the cleanliness and maintenance of food preparation equipment.

• Foster a safe working environment and communicate regularly with the Cluster Executive Chef regarding kitchen activities and results.

Qualifications:

• Previous leadership experience in the culinary field is required.

• A diploma certification in a culinary discipline is an asset.

• Proficiency in Microsoft Windows applications is required.

• Strong interpersonal and problem-solving abilities.

• Highly responsible, reliable, and capable of working under pressure in a fast-paced environment.

• Ability to work cohesively as part of a team and focus on guest needs.

• Service-focused personality with a proven ability to build and maintain relationships.

• Excellent networking and communication skills.

• Ability to lead by example, set high performance standards, and foster a strong team culture.

• Experience working in a Union environment is an asset.
