Commis Chef

As a Commis Chef, you will be responsible for ensuring the efficient operation of the Kitchen Department in line with Hotel Policy. Your primary duties will include maintaining the standards of performance as outlined in the Departmental Operations Manual, preparing and delivering fresh and cooked food items to various kitchen sections, and following brand standards in food preparation.

You will assist in ensuring that stock from suppliers meets the desired quality, manage stock securely, and adhere to food safety and hygiene standards, including HACCP and municipal regulations. You will also contribute to minimizing waste and ensuring portion control according to standard recipes.

What you will be doing:

• Ensure that the daily requirements of each kitchen section (meat, fish, seafood) are delivered at the correct time, in the requested quantity, and to the required standards.

• Assist in the preparation and delivery of food as per brand standards.

• Consult with superiors regarding food production for special events such as functions and outside catering.

• Verify that stock received from suppliers meets the desired quality standards.

• Maintain a clean and organized workspace, including butchery equipment and utensils, adhering to hygiene requirements.

• Operate kitchen equipment safely and efficiently.

• Implement food safety and hygiene standards, including HACCP.

• Participate in scheduled training and development programs.

• Be flexible and rotate between different kitchen outlets as needed.

• Perform any other reasonable duties as assigned.

Qualifications:

• Minimum of 1 year of experience in a similar role in the industry.

• Ability to demonstrate a confident personality and a passion for learning and being challenged.

• Strong understanding of modern food trends.

• Willingness to work a variety of shifts, as the hotel operates seven days a week for breakfast, lunch, and dinner.
